01 / ABOUT THE PLACE

About this place

Some days call for the clean, aromatic profile of pure dried sardines; others demand a thick, velvety poultry soup clinging to hearty noodles. Located in Shibakoen 2-chome, Menya Shibano caters to both moods, drawing on domestic Japanese anchovies and dried fish flakes for its broths. The kitchen crafts two distinct styles: a light chuka soba with crisp dashi definition, and a rich, slow-simmered chicken paitan blend.

The foundational niboshi chuka soba pairs a chicken stock with dashi made from Japanese anchovies—sourced from a historic Kyoto wholesaler founded in the early twentieth century—alongside mackerel and round herring flakes. Its gentle soy sauce flavor keeps bitterness in check, wrapping cleanly around thin straight noodles while minced raw onion provides a brisk, palate-cleansing bite. Diners after deeper intensity can choose the rich niboshi ramen, made with poultry and aromatic vegetables simmered at length, or the rich tsukemen, which pairs medium-thick flat noodles with a thick dipping soup cooked down from dried sardines and chicken bones.

To accompany the noodles, the menu offers rice topped with diced chashu seared fragrant with a blowtorch. At lunchtime, a mini pork bowl is available at an affordable price when ordered alongside noodles, rounding out a hearty midday meal. Other options include a dried-sardine-scented egg-over-rice bowl and canned beer, while house chili seasoning and dried sardine powder on the counter let guests adjust the flavors as they eat.

The shop is an intimate setting with roughly 5 counter seats. Guests purchase tickets at the machine outside before sitting down. Payment is cash only, making it a casual, dependable neighborhood stop for a bowl on your own.
